2021 / White

2021 CHARDONNAY

The JUSTIN Chardonnay is stylistically unique, with ripe citrus and pear fruit complemented with toasted oak, refreshing acidity, and a mineral texture.

Since the JUSTIN Chardonnay does not undergo malolactic fermentation, it retains a fresh cleansing palate without a trace of buttery flavor and aroma, but with a touch of new French oak.

Near full-bodied, but beautifully elegant and balanced, it is a very sophisticated style of Chardonnay. It’s drinking beautifully right now, but don’t be afraid to try it after a year or two in the cellar, which will show added complexity and richness.

Tasting notes

Appearance: Bright straw colored with silver highlights and slow forming tears.

Aroma: Very aromatic and fruit forward with notes of ripe yellow apple, white peach, mandarin, lemon and tart pineapple and oak with subtle hints of citrus blossom and almond.

Palate: Moderately full-bodied with yellow apple, pear, nectarine, peach, and ripe lemon on entry. The mid-palate shows sustained fruit highlighted by notes of blanched almonds, cherry blossom, with savory button mushroom and roasted nut leading to a lengthy, finish that is fresh and balanced with the slightest hint of oak, and a wet stone mineral texture.


Food pairings

The 2021 JUSTIN Chardonnay is full but fresh on the palate with a mix of ripe fruit and savory notes, making it a natural paring with dishes that are full and rich like the Alsatian classic, Tarte Flambée, a savory tart with flaky dough, caramelizedonions, creamy cheese and diced ham.
