In 1981, Justin Baldwin began a quest to make fine wines in Paso Robles based on the traditions of the winemaking region of Bordeaux in France. The Paso Robles region proved to be an ideal place to grow cabernet sauvignon, merlot and cabernet franc. Of these varieties, cabernet sauvignon has showed particularly exceptional results. After decades of experience making wine from this variety, we felt the time had come to release a varietal Cabernet Sauvignon at the quality level of our most exclusive wine, ISOSCELES Reserve. We chose to name the first vintage of this wine EIGHTY ONE to honor the year we began our journey. Produced in very limited quantities, EIGHTY ONE is a stunning example of a world class Cabernet Sauvignon that balances power and complexity, and like the best California Cabernet Sauvignons, has an ability to age gracefully with time.
This library release is perfect for those who appreciate the character and complexity of mature wine. You’ll notice that the wine’s primary flavors have become less dominant with aging, creating entirely new aromas and flavors to enjoy.
