Chef’s Ceviche

Ingredients
- 1 ripe but firm avocado, diced
- 1 cup cooked shrimp, peeled and deveined
- If using large shrimp, chop into bite-size pieces; small shrimp can be left whole.
- ½ cup assorted citrus segments (reserve the juice)
- Examples: tangerines, cara cara oranges, pomelo, oro blanco grapefruit, navel oranges—use whatever you have on hand.
- 3 tablespoons minced red or orange bell pepper
- ½ cup diced tomato, seeds and core removed
- 2 tablespoons freshly chopped cilantro
- 1 small red onion, diced
- 1 tablespoon olive oil
- Juice of 1 lime
- Sea salt, to taste
- Pinch of cayenne pepper

Preparation
- Step 1: In a mixing bowl, combine the shrimp, citrus segments, bell pepper, tomato, cilantro, and red onion. Toss lightly. Season to taste with the reserved citrus juice, olive oil, sea salt, and cayenne pepper. Gently fold in the diced avocado last to avoid breaking it up.
- Step 2: Serve in a bowl with fresh tortilla chips. For best results, use citrus at room temperature.
Variations
- Crab Salad: Substitute or add fresh crab meat.
- Halibut or White Fish Ceviche: Replace cooked shrimp with fresh (sushi-grade) white fish. Marinate in the citrus juices for up to 30 minutes.
- Vegetarian/Vegan: Omit the seafood entirely.
- Chips/Crisps: Swap tortilla chips for plantain chips or taro chips for a colorful, lighter option.
